Grading of the Wheat Grains

 

The initial stage of the wheat manufacturing process involves grading the wheat grains. Upon arrival at the mills, the grains undergo various tests to assess their physical and chemical properties. Grading is then carried out based on different factors, with protein content being the most commonly used criterion.

 

Purifying the Wheat Grains

 

Following the grading, the wheat grains undergo purification by screening for unwanted particles. The purification process involves several cleaning steps. The first piece of equipment employed is a separator, which allows the grains to pass through metal screens of varying sizes, effectively removing stones and objects larger than the wheat grains. Subsequently, an aspirator, functioning like a vacuum cleaner, suctions up objects lighter than the wheat. The final cleaning step involves passing the wheat through a disk separator, where the grains move over multiple disks. Once the disks stop, the wheat and objects of similar weight are collected together, while objects lighter than the wheat are separated.

 

Should further purification be required, a spiral seed separator is employed, operating on the centrifugal force principle. The grains are spun at high speed, and due to the oval shape of wheat grains, they accumulate in the center of the machine, while objects of other shapes are ejected to the edges. Large magnets, scourers, and electronic color sorting machines may also be utilized for additional purification if necessary.

 

Preparing Grains for Grinding

 

Once the wheat grains are confirmed to be clean, preparation for grinding commences. The grains undergo washing with warm water and are subsequently dried using a centrifugal pump. Maintaining the moisture content at the optimum level is crucial, achieved through conditioning. Various methods of conditioning, such as cold, warm, or hot conditioning, can be applied.

 

Grinding the Wheat

 

The next step involves grinding the grains to produce the required wheat flour. An entoleter is used to spin the grains against metal rollers, each with different sizes and speeds. Typically, 5-6 pairs of metal rollers are employed to achieve the desired smoothness of the flour.

 

Processing the Flour

 

Throughout the grinding process, certain nutrients may be lost. To enhance the nutritional content, the flour is enriched with vitamins and minerals. Additionally, oxidizing and bleaching agents are incorporated to make the flour suitable for baking.

 

The aforementioned steps outline the primary process of wheat flour milling.
